Recently published in New Food Magazine, this article offers an in depth review of a novel technique used to analyze consumer preferences in the food and beverage category, even when the complete design is not yet available. Sensory Spatial Segmentation uses the combination of sensory profiling data and consumer liking data. The sensory profiling data is based on a full range of products in the test, but the consumer liking data can be from either a complete or incomplete design.
