吃素四大動機,你嗅到素食商機了嗎?

近年來,素食主義在全世界越來越流行,台灣的素食人口也日益增加。許多零售通路商或餐飲業者也紛紛為此推出素食或蔬食產品來抓住消費者味蕾。近期最有感的是全家看好素食商機和食素人口與日俱增,引進素肉大廠的「Beyond Meat 未來漢堡排」。
根據益普索 (Ipsos) 20197月執行《外食市場研究報告》顯示台灣每10個人中就有1人聲稱自己是素食主義者,這代表著台灣有超過200萬的素食人口。促使人們吃素的原因主要是:養生與健康相關理由 (62%)、其次為宗教信仰 (37%) 和環保因素(34%)。我們另外透過 Synthesio 輿情分析平台來探討驅動消費者吃素的動機時,並進一步將其分成四類:健康愛好者、動物愛好者、健身愛好者和宗教信仰者(詳見圖1)
 
此外,社群媒體上的意見領袖也在這波素食風潮中扮演著相當的影響力。如雀兒在IG 上有超過 13 萬的追蹤者、YouTube 頻道上有超過12千名追蹤者,她會定期發出素食食譜來倡導健康飲食觀念。而婉兒則屬於健身愛好者,會定期發出與運動和素食飲食相關的貼文。
