一次搞懂外食選擇和成長趨勢

餐飲業競爭越來越激烈,同時也面臨市場需求快速變化的壓力,許多餐飲業者不敵高房租或無法快速跟上消費者口味的改變而退出。根據主計處最新的統計數據,餐飲業的年銷售額為$7,350億元,年增長率為6%,依舊維持在高檔。此外,外送市場近年也快速崛起,估計收入超過$300億新台幣,因此吸引了許多餐廳和平台供應商投入戰場。

根據益普索(Ipsos)最新發表的《外食市場研究報告》顯示,有高達7成的民眾每周外食或外帶七次以上,更有2成以上的民眾餐餐外食。2019年益普索的《百大影響力品牌研究報告》的調查結果也完全驗證了整體餐飲業的成長與趨勢。百大品牌中的8個餐飲品牌有6個品牌2019年的影響力比2018年提升。

當細看民眾的外食習慣時發現,早餐的外食比例是一天之中最高的一餐,有高達8成的民眾早餐習慣到早餐專賣店買豆漿、米漿或奶茶外加其他餐點,其次則是便利商店(35%)、西式速食店(32%)或中式快餐店(23%)購買早餐。除了午餐、下午茶、晚餐和宵夜的外送,許多外送平台也加入早餐外送的行列。目前有超過一半的消費者會打電話訂餐,無論在App或網頁上訂餐有近三成的消費者早上會點外送。在三成的比例中有30%為住在北部的消費者,而中南部的比例僅佔10%左右,由此顯示早餐外送仍有相當的成長空間。
